IT’S ALL IN THE PASTRY

Friday 16th October –  a good cook needs to know how to make perfect pastry and it needn’t be a mystery, or something to be frightened of! With a few simple techniques and some family secrets, you can learn how to make truly special sweet, savory and choux pastry that works every time. It promises to be a busy morning with lots of hand on experience. And alongside recipes for a range pies and puddings, you’ll make a polenta pastry savory tart for lunch followed by yummy chocolate eclairs and a French style apple tart to take away and enjoy at home with your family!

The class will take place in my country kitchen, Gyn Race, Royd Lane, Millhouse Green, S36 9NY. Places are limited to 6 people per course – £70.00 pp. All courses include lunch, plus teas and coffees throughout the day (10am – 2pm). All equipment and ingredients will be supplied – you just need to bring yourself along and enjoy your day in the beautiful surroundings of Millhouse Green. FLAVOURS OF ITALY

FRIDAY 9 October  – this course is a must for all Italian food lovers! An example of some of the dishes you will learn how to make on the day – fresh pasta, ravioli, rosemary foccacia, sweet leek and mascarpone sauce, biscotti biscuits, tipsy tiramisu, mini Italian cheesecake, panettone bread & butter pudding, orange polenta cake, ravioli and gnocchi. PERFECT PIES

Friday 18th September – come along and learn how to make two fantastic handmade ‘Penistone Pork Pies’ using hot water pastry  and a traditional savoury pasty with a melt in the mouth short crust pastry to take away and enjoy with the family. This course includes a ‘Penistone’ Ploughman’s lunch with Yorkshire cheese followed by homemade cakes plus teas and coffees throughout the day (10am – 2pm). PUDDINGS & TEATIME TREATS

Friday 11 September – bake a variety of classic British puddings and teatime treats, such as Bakewell or treacle tart, bread & butter pudding, variety of sweet/savory scones, mini lemon drizzle cakes, mini chocolate meringues, chorizo/pork sausage rolls, profiteroles and polenta tart . A TASTE OF SICILY (new)

SUMMER BAKES

FRIDAY 7th August – join us on this course and create gorgeous baked treats, perfect for summer entertaining. Example of dishes made on the day sweet/salty cheesecake, fruit clafoutis, brioche, minestrone soup and a rustic strawberry tart. There will be lots to take home and share with family and friends. Price £70pp includes lunch, plus teas coffees throughout the day (10am – 2pm). Smaller groups – maximum of 6 to take into account social distancing requirements. PORK PIE & PICCALILLI

FRIDAY 5th June – Penistone Pies & Puddings producer of ‘champion’ pies from her base at Millhouse Green on the edge of the Peak District for an introductory course on how to produce one of the all time British classics – the pork pie.  Not only will she show you how to make the unique hot water crust pastry but she will also instruct you how to create a meat filling fit for a king. As well as catering for traditional pork pie lovers Jacqui will reveal how to customise your pies to introduce different cuts, types of meat and additional ingredients to give them your own distinctive flavour. Jacqui will also demonstrate how to produce your own gourmet crunchy farmhouse piccalilli to serve as the perfect accompaniment to this classic pie. On completion of the course you will take away your own pork pies created on the day one using her ‘Little Champion’ pie making machine and one made by hand to share with friends and family and a jar of Jacqui’s fabulous crunchy pork pie piccalilli plus a pork pie recipe .The class will take place in my country kitchen, Gyn Race, Royd Lane, Millhouse Green, S36 9NY. BREADMAKING FOR BEGINNERS

Friday 5th June – learn how to bake your own delicious artisan bread without the use of a bread machine! This course is perfect for beginners and those wanting to improve their bread making skills.  You will make a pizza  or calzone for lunch and an array of freshly baked breads to taste and take home to share with family.  Also included: an introduction to sourdough bread. Sourdough is what all breads used to be before baker’s yeast was invented! The taste is truly delicious!

ONE POT WONDERS

FRIDAY 21st February- create a selection of one pot dishes with a minimum of fuss – a seasonal soup with black treacle soda bread or mini cottage rolls,  Marsden family beef stew, Spanish pork casserole with chorizo (vegetarian option available) and a school treacle sponge, Eve’s pudding, apple and berry granola crumble, or steamed chocolate pudding with chocolate sauce perfect for those family gatherings or informal dining with friends at home.
